What's a good motorcycle to start with if I want to restore an old one?

I've got some mechanical skills and have worked on old cars, I like to ride, and would like something that would be maneagable to start with. Was initially thinking a Triumph, but am open to suggestions. I'm less interested in rarity and showing the bike, and more interested in the fun of fixing and riding something. Thanks for insight.
